White Chocolate Mousse With Fresh Berries

White Chocolate


Ingredients

1 cup (8-fl-oz) Glucerna® Homemade Vanilla Snack Shake
1/3 cup cold water
1/2 teaspoon pure vanilla extract
1/4 teaspoon almond extract
One 1-ounce package instant sugar-free, fat-free white chocolate pudding mix
3/4 cup sugar-free nondairy whipped topping
3 tablespoons grated sugar-free white chocolate
2 tablespoons almond slices
1 cup fresh raspberries, blueberries, blackberries or mixed berries
Fresh mint (optional)
 


Directions
  1. In a mixing bowl, combine the Glucerna Snack Shake, water and vanilla and almond extracts.
     
  2. Whisk in the pudding mix, and then whisk vigorously for 2 minutes until thick.
     
  3. Fold the whipped topping and grated white chocolate into the mousse.
     
  4. Divide the mousse into 4 serving dishes.
     
  5. Chill for 1 hour.
     
  6. While dessert is chilling, place the almonds in a small, nonstick frying pan and toast over medium heat.
     
  7. When ready to serve, top each serving with 1/4 cup fresh berries and toasted almonds, and garnish with mint.
