Spiced Whole-Grain Pancakes


Ingredients

1 cup (8-fl-oz) Glucerna® Homemade Vanilla Shake
1/2 cup egg substitute
2 tablespoons canola oil
2 tablespoons sugar-free maple syrup
2 tablespoons water
1/4 cup brown sugar substitute
1 cup all-purpose flour
1/2 cup whole wheat flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 tablespoon apple pie spice blend
1/2 teaspoon ground ginger

Directions
  1. In a mixing bowl, whisk together the Glucerna, egg substitute, oil, syrup, water, and sugar substitute.
  2. In another large mixing bowl combine both flours, baking soda, salt, and spices.
  3. Add the wet ingredients to the flour mixture and stir to make a batter.
  4. Lightly mist a griddle or nonstick pan with cooking spray and pour 1/4 cup of batter onto the griddle.
  5. Cook until the bubbles break and turn pancakes to cook on opposite side.
  6. Continue the process with the remaining batter. Serve with sugar-free syrup.
