Ingredients
1 cup (8-fl-oz) Glucerna® Homemade Vanilla Shake
1/2 cup egg substitute
2 tablespoons canola oil
2 tablespoons sugar-free maple syrup
2 tablespoons water
1/4 cup brown sugar substitute
1 cup all-purpose flour
1/2 cup whole wheat flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 tablespoon apple pie spice blend
1/2 teaspoon ground ginger
Directions
- In a mixing bowl, whisk together the Glucerna, egg substitute, oil, syrup, water, and sugar substitute.
- In another large mixing bowl combine both flours, baking soda, salt, and spices.
- Add the wet ingredients to the flour mixture and stir to make a batter.
- Lightly mist a griddle or nonstick pan with cooking spray and pour 1/4 cup of batter onto the griddle.
- Cook until the bubbles break and turn pancakes to cook on opposite side.
- Continue the process with the remaining batter. Serve with sugar-free syrup.
