Ingredients
4 ounces soft plain tofu
1/4 cup Dijon mustard
2 tablespoons balsamic vinegar
1 tablespoon capers
1 teaspoon fresh tarragon or 1/4 teaspoon dried tarragon
2 6-inch scallions, minced
1 tablespoon chopped flat leaf parsley
1 dash Tabasco®* sauce.
1/2 cup Glucerna® Homemade Vanilla Shake
Freshly ground black pepper, to taste
Directions
- Place the tofu in the bowl of a food processor and puree. Add all remaining ingredients and process until smooth.
- Store the dip in an airtight container in the refrigerator until serving time. The dip can be stored for one day after it has been prepared.
- Serve with 1 cup of raw, assorted vegetables, such as: colored peppers, spears of endive, asparagus, cauliflower and broccoli, celery sticks, or fresh fennel.
