Creamy Dijon Mustard Dip


Ingredients

4 ounces soft plain tofu
1/4 cup Dijon mustard
2 tablespoons balsamic vinegar
1 tablespoon capers
1 teaspoon fresh tarragon or 1/4 teaspoon dried tarragon
2 6-inch scallions, minced
1 tablespoon chopped flat leaf parsley
1 dash Tabasco®* sauce.
1/2 cup Glucerna® Homemade Vanilla Shake
Freshly ground black pepper, to taste

 


Directions
  1. Place the tofu in the bowl of a food processor and puree. Add all remaining ingredients and process until smooth.
     
  2. Store the dip in an airtight container in the refrigerator until serving time. The dip can be stored for one day after it has been prepared.
     
  3. Serve with 1 cup of raw, assorted vegetables, such as: colored peppers, spears of endive, asparagus, cauliflower and broccoli, celery sticks, or fresh fennel.
